Tuscan Chicken Pasta
Ingredients
- Penne pasta
- Chicken fillets
- Garlic
- Sun dried tomatoes
- Rocket
- Cream
- Parmesan
- Oregano
- Onion White
Method
- Salt water in a pot for pasta and bring to a simmer.
- Add 2 portions of dried pasta and cook for 12 minutes on medium heat until al dente.
- Sauté chopped onion in oil, add sliced chicken and cook until lightly browned. Add finely chopped garlic after and cook for another few minutes.
- Once chicken is cooked add herbs and seasoning, then add tomatoes, cream and butter.
- Add some pasta water to loosen, add half of the Parmesan, then add rocket, season to taste with black pepper and salt, and finally add more Parmesan.
- Add in the cooked strained pasta, toss, garnish with more Parmesan and a crack of black pepper.
