Cajun Salmon Pasta with Garlic and Sundried Tomatoes

Ingredients

  • 2 salmon darnes
  • 1 tsp Cajun spice
  • 2 cloves garlic
  • 1 small onion
  • 1 bell pepper
  • 5-6 sundried tomatoes
  • 60g low fat cream cheese
  • 30g Low Low cheese
  • 200g pasta
  • 1 tsp mixed herbs
  • Fresh basil
  • Fresh parsley
  • 1 tbsp tomato purée

Method

  1. Start by bringing a large pot of salted water to boil for the pasta.
  2. Preheat your oven to 375°F (190°C).
  3. Season the salmon darnes with the Cajun spice on both sides. Place the seasoned salmon darnes on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for about 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon is baking, cook the pasta in the boiling salted water according to the package instructions until al dente.
  6. Once cooked, drain the pasta, and set it aside.
  7. In a large skillet, heat a little olive oil over medium heat. Add the chopped onion, pepper and minced garlic to the skillet and sauté for about 1 minute until fragrant. Stir in the chopped sundried tomatoes and cook for another 2 minutes.
  8. Add the cream cheese and tomato purée to the skillet, stirring until the cream cheese is melted and the sauce is well combined. Season with mixed herbs and salt to taste.
  9. Add the cooked pasta to the skillet with the sauce. Toss the pasta in the sauce until it is evenly coated.
  10. Once the salmon is cooked, remove it from the oven. Place a portion of the creamy pasta onto each plate.
  11. Sprinkle freshly chopped basil and parsley over the pasta and salmon.
