Peanut Butter and Jam Baked Oats Breakfast, served with Yogurt

Ingredients

  • 200g oats
  • 2 bananas
  • 400ml low fat milk
  • 150g berries
  • 2 tbsp peanut butter
  • 2 tsp reduced sugar jam
  • 2 tbsp yogurt
  • Banana or other fresh berries to top

Method

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish or individual ramekins with a little bit of butter or cooking spray.
  3. Peel the bananas and place them in a mixing bowl. Mash the bananas with a fork or potato masher until smooth.
  4. Add the oats, milk, and mashed bananas into a mixing bowl. Stir well until all ingredients are combined.
  5. Stir the peanut butter and jam into the oat mixture until evenly distributed.
  6. Gently fold in the berries into the oat mixture. You can use any berries you prefer, such as strawberries, blueberries, or raspberries.
  7. Pour the oat mixture into the prepared baking dish or ramekins, spreading it out evenly.
  8. Bake for about 25-30 minutes, or until the oats are set and the top is golden brown.
  9. Once baked, remove the oats from the oven and let them cool slightly. Serve the baked oats with a dollop of yogurt on top.
  10. Garnish with additional slices of banana or fresh berries if desired.
