SIMPLE STEAK WITH

Creamy Spring Greens

COOK’S NOTES:

A perfectly cooked steak can be the launch pad for many delicious dinners, and served with these creamy greens it makes a truly satisfying meal. Spring greens are the first leafy greens of the year and can be found prepared and shredded in bags in most supermarkets, but baby kale, spinach, or shredded savoy cabbage will all work wonders here in their place.

Ingredients

150g spring greens, finely shredded

100g fresh or frozen peas 75ml single cream Squeeze of lemon juice

2 sirloin steaks

Core ingredients

2 tbsp olive oil

1 small onion, thinly sliced 2 garlic cloves, thinly sliced 1 tbsp grainy mustard

Sea salt and black pepper

Instructions

1.Place a large heavy-based frying pan over a medium–high heat and add 1 tablespoon of the oil. Add the onion and garlic and fry for 8–10 minutes until softened. Add the spring greens and a small splash of water and cook for a minute or 2, then add the peas and cook for a minute more.

2.Add the mustard and cream and bubble together. Season and add a squeeze of lemon juice.

3.Towards the end of the greens cooking, rub the steaks with the remaining tablespoon of oil and season with salt and lots of pepper. Heat a griddle pan over a high heat and fry the steaks for around 2 minutes on each side, or until medium rare. Set aside to rest on a plate,

4.Place the spring greens and peas on serving plates. Slice the steak thinly, tossing in the resting juices and serve on top of the spring greens and peas
