125g self-raising flour
a pinch of salt
2 tsp caster sugar
1 egg, separated
150ml skimmed milk
1 tsp vanilla extract
calorie-controlled cooking spray
2 bananas, sliced
120g fat free natural fromage frais
4 tsp honey to drizzle
Put the flour, sugar and salt in a mixing bowl and make a well in the middle.
Put the milk, egg yolk and vanilla extract into a jug and stir.
Whisk the milk mixture into the flour mixture until you have a smooth batter.
In a separate bowl, whisk the egg white to soft peaks and then gently fold into the batter with half the blueberries.
Heat a large, non-stick frying pan and mist with cooking spray.
Put 2 spoonfuls of the pancake mixture into the pan.
Once you see bubbles forming (1-2 mins), flip the pancakes and cook on the other sides.
Keep the cooked pancakes warm while you make 3 further batches (total 8 pancakes).
Combine the rest of the blueberries with the sliced bananas.
Serve 2 pancakes per person topped with fruit, fromage frais and a drizzle of honey.
